This whole dish takes less than 15 minutes to make. To add more protein into your meal, you may add 3 eggs, already scrambled.
Buy your pea shoots and garlic at your local Farm stand. Local stands are located every weekend at Rockville or Bethesda Central Farmers market.
Ingredients:
- 2lbs of pea-shoots
- 3-6 garlic cloves, to taste
- 2 Tablespoons of Olive oil
- 1 Tablespoon of Chinese cooking sherry (Shaoxing cooking sherry)
- Salt to taste
Preperation:
Wash pea shoots and dry thoroughly in a salad spinner.
This is very important or else your dish will be excessively watery while diluting taste.
Mince garlic while you heat up your wok to high heat.
Add olive oil and swirl in pan.
Add garlic and stir fry for 15 seconds.
Add pea shoots and stir fry 30 seconds.
Add the cooking sherry and salt and stir fry until greens are just wilted.
Serve immediately.
